Strawberry Lemonade Bars

Another good thing about Texas: you can have a picnic all year round.
Anytime can be grilling time, so we had a grilling "party" the other day.
These were my contribution:
They're nice and tart which I love. To me they taste exactly like strawberry lemonade, lol. So yummy.



Strawberry Lemonade Bars

For crust:
  • 2 Tbsp granulated sugar
  • 1/4 c butter, room temp.
  • 3/4 c flour
  • 1/8 tsp salt
Filling:
  • 1/2 c fresh lemon juice (I used the juice of 3 lemons then used bottled lemon juice for the rest)
  • 1-1.5 tsp lemon zest (again 3 lemons)
  • 1/4-1/3 c fresh strawberry puree
  • 3/4 c granulated sugar
  • 2 large eggs
  • 2 Tbsp flour
  • 1/4 tsp baking powder
  • 1/8 tsp salt
Directions:

Preheat oven to 350F.
For the crust, cream together the sugar and butter. Then add flour and salt, continue to beat until crumbly. Press this firmly into the bottom of an 8x8 inch pan. Bake for 17 minutes.

While that is baking, prep the filling by beating the lemon juice, zest, puree, sugar and eggs until smooth (and you can't see any apparent egg bits). Then add the flour, baking powder and salt and beat again until smooth.
Pour the filling onto the hot crust and bake for 23-26 minutes until set.
Let cool completely and refrigerate. Easiest to cut clean squares after refrigerated.
