Cookies & Cream Mini Cupcakes: Halloween Version


Technically I made these after Halloween. But whatev.
These are some of my favorite cupcakes. I've seen similar ones where they write "RIP" on the oreo so that it looks like a tombstone...very cute, but too much work for me~

Cookies & Cream Mini Cupcakes

Cupcakes:
  • 1 box devil's food cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 small box instant chocolate pudding mix
  • 1 pkg mini oreos for toppers
Frosting: (got this recipe from Your Cup of Cake, delish)
  • 1/2 cup butter, softened
  • 8 oz cream cheese, softened
  • 2 tsp vanilla extract
  • 5 cups powdered sugar
  • 1/2 cup finely crushed oreos (if they aren't fine enough they will get stuck in your piping tip)
Directions:

Preheat oven to 350F. Line mini cupcake tin with cupcake liners.
Blend together all of the cake ingredients in a large bowl. Fill cupcake wells 3/4 full. Bake for 15-20 minutes. Let cool completely.

For the frosting, beat together the butter and cream cheese. Add the vanilla. Beat in the sugar one cup at a time until you reach your desired consistency. Fold in the crushed oreos.
Pipe the frosting onto the cooled cupcakes and top with a mini oreo.
