Easy Chocolate Toffee Cupcakes

Didn't pre-plan any Superbowl snacks, and we don't shop on Sundays, so I made treats from what I could find. Ended up making kimbap and these cupcakes. Went to one house for the first half and a different house for the second. Man, these people have some nice projector/homey setups. I don't even like football but it was a good time. If I were an over-achiever I could have made these milk duds look like footballs.



Easy Chocolate Toffee Cupcakes

Ingredients:

  • 1 box triple chocolate fudge cake mix
  • 3 eggs
  • 1-1/4 c water
  • 1/2 c oil
  • 1 pkg chocolate pudding mix
Frosting:
  • 1-1/2 c butter, softened
  • 5 c powdered sugar
  • 1-1/2 tsp milk
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 3-4 Tbsp caramel syrup
Topping:
  • Heath chocolate toffee bits
  • milk duds
Directions:

Preheat oven to 350F and prepare a cupcake tin with liners.
Beat together cake mix, pudding mix, eggs, water and oil. Fill liners 2/3 full and bake for 15-20 min, turning halfway through. Let cool completely.

For the frosting, beat together the butter, salt and sugar. Add milk and vanilla and mix. Stir in the caramel syrup.
Pour the Heath bits into a shallow bowl or plate. Pipe frosting onto the cooled cupcakes and then roll the frosted cupcakes in the Heath. Top with a milk dud for garnish.
