This is a variation of Chipotle's corn salsa.
We ate it with beef carnitas and this was the first thing gone, we gobbled it right up. Definitely making this next time I have to bring a side to a party or something.
Corn Avocado Salsa
1 small jalapeno pepper, seeded and chopped
2 tablespoons chopped fresh cilantro
3 tablespoons chopped red onion
3 tablespoons chopped red onion
1 ripe avocado, diced
2 tablespoons fresh lime juice
1/2 teaspoon sugar
2 tablespoons fresh lime juice
1/2 teaspoon sugar
salt, if desired
Directions:
Mix the corn, jalapeno, cilantro and red onion in a bowl. Stir in the lime juice and sugar.
Add in the avocado right before serving. Taste, add salt if desired.
