Unfortunately the hubby doesn't really like funfetti...so using this as my inspiration, I made the cake mix into lemon cupcakes. They turned out soooo good~~ I love lemon~
Lemon Glazed Funfetti Cupcakes
1 box funfetti cake mix
3 eggs
1/4 cup oil
3/4 cup buttermilk (I substituted by putting 3/4 T lemon juice in a measuring cup, adding milk to the 3/4 c point, and letting sit for five minutes)
1/3 cup fresh lemon juice
3/4 cup light sour cream
1 tsp vanilla extract
Lemon Glaze:
3 T fresh lemon juice (I ran out so it ended up half fresh, half bottled)
About 1-1/2 c powdered sugar
Vanilla Frosting: (this is the Sprinkles recipe)
1 cup softened butter
3-1/2 cups powdered sugar
1 teaspoon milk
1 teaspoon vanilla extract
1/8 teaspoon salt
Directions:
Preheat oven to 350F.
Whisk all wet ingredients together in a large bowl, then stir in the cake mix.
Line jumbo cupcake tin with liners and fill them 3/4 of the way full with cake mix.
Bake for about 22-27 minutes. (If doing normal-size cupcakes do 15-20 minutes.)
Glaze:
In a small bowl, pour in the lemon juice first and then stir in the powdered sugar until smooth.
Frosting:
Beat together the butter, sugar, and salt.
Add the milk and vanilla, then beat for just a few more minutes (about 3).
Cover the frosting if not using right away.
Let the cupcakes cool just a bit. While they are still slightly warm, use a toothpick to poke holes into each cupcake, and pour the glaze on.
After the cupcakes are cool and the glaze is set, you can pipe the frosting on.
I topped them with a bit of coconut~
