Super Easy Andes Mint Chocolate Cupcakes

Made these for my hubby's flight. They loved them :) I had leftover frosting so I threw it on some brownies when I went over to a friend's dang good.

Super Easy Andes Mint Chocolate Cupcakes

  • 1 box Devil's Food cake mix
  • 1 small box chocolate pudding mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • Andes baking chips, for topping
I used this frosting, it's delicious. But go slow on the heavy cream, I only put in one tablespoon and it was already too much.

Preheat oven to 350F. Ready a cupcake pan with liners.
Mix the cake mix, pudding mix, water, oil, and eggs in a large bowl.
Fill the liners about 3/4 of the way full. Bake for 18-21 minutes.
While the cupcakes are in the oven, whip up the frosting.
Allow the cupcakes to cool completely before piping on the frosting; sprinkle with Andes baking chips. So ridiculously easy.
